Dad's Augratin Potatoes

This is such an easy recipe, and once you've had them, you won't want to eat those boxed potatoes ever again.

8-10 medium sized potatoes -enough to fill a 2 qt. dish (I like to use golden potatoes.)
1/2 yellow onion
1/2 stick butter
2-3 Tablespoons flour
2 cups milk
Salt & pepper

Peel and slice potatoes and onion.  Layer them in a 2 qt. greased casserole dish.  Salt and pepper each layer.

In a sauce pan on the stove, melt butter.  Stir in flour to thicken butter and stir constantly so you don't scorch the butter.  Add 2 cups of milk, stir over high heat with a whisk until it boils and thickens.  Pour this thickened rue over the layered potato and onion slices.  It will seep down  through all of the potatoes and onions.

Cover casserole dish with lid and microwave- yes, I said microwave, for 20-25 minutes.
Put fork in potatoes to see if they are cooked.  If not, cook a few more minutes.
Remove from microwave and add sliced Velveeta or American cheese to cover top of potatoes. Cover with lid to allow cheese to melt for about 5 minutes.  Serve!!
